
Cajun Chicken Sausage Pasta Bowls
This creamy cajun chicken pasta is a healthy, high protein meal prep lunch or dinner that’s comforting and tasty! With 40g of protein per portion, it will keep you full and can be made in under 30 minutes too!

Boil the pasta in salted water & cook till al dente, save some pasta water for later.

Spray a large pan with oil & once hot add sliced chicken chipolatas & smoked paprika, mix & cook to brown.

When chipolatas have 2 mins left, add chopped turkey bacon & cook for 2 mins.

Remove everything from the pan & set aside, spray more oil & sauté onions and red bell pepper for a minute.

Add minced garlic, tomato puree, sundried tomatoes, mixed herbs and cajun seasoning.

Mix & cook for a few mins till soft.

Add light philadelphia, chicken stock and parmesan & mix till smooth. Bring to a gentle simmer.

Add spinach and wilt & season with salt & pepper.

Add cooked meats and pasta back into the pan with a little reserved pasta water.

Mix together & cook for another 1-2 mins, add more pasta water if needed.

Divide into 3 portions & garnish with dried parsley & chilli flakes.

Cool fully & cover with a lid & store in the fridge for 3-4 days.
