A show-stopping yet simple starter of sweet roasted carrots on a garlicky whipped feta and yogurt base, finished with seeds and honey.
Heat the oven to 200°C (390°F). Peel the carrots and slice them in half lengthways (or into thick batons).
Toss the carrots with a drizzle of olive oil and a pinch of salt (and pepper if you like), spread on a baking tray, and roast for 25–30 minutes until tender and caramelised at the edges.
Meanwhile, add the feta, Greek yogurt, garlic cloves, a small pinch of salt, and a drizzle of olive oil to a food processor or blender. Blitz until very smooth and creamy, scraping down the sides as needed.
Spread the whipped feta mixture over a serving platter in a generous swoosh.
Top with the roasted carrots, then sprinkle over the sesame seeds and nigella seeds. Finish with a drizzle of honey and a little extra olive oil.
Taste and adjust with a pinch more salt or honey if needed. Serve warm or at room temperature as a sharing starter.
