One-Pan Protein & Veg Skillet
A flexible base recipe you can make with whatever protein and veggies you keep on hand — vegetarian/pescatarian and lower-carb friendly.

Heat oil in a large skillet over medium heat.

Add onion (if using) and cook 3–4 minutes until softened.

Add mixed veggies and cook, stirring, 5–7 minutes (cover and add a splash of water/broth if they start to stick).

Stir in garlic and cook 30–60 seconds until fragrant.

Add your protein of choice and cook until heated through and lightly browned.

Season with salt, pepper, and your chosen herbs/spices. Add a splash of broth/water if you want it saucier.

Top with cheese or nutritional yeast if using, taste, adjust seasoning, and serve as-is or over greens/cauliflower rice.
