Preheat your oven to 200°C / 400°F. Line a baking tray with baking paper.
Wash and cube the sweet potato into bite-sized pieces. Toss with half the olive oil, a pinch of salt, pepper, and half the herbs. Spread on one side of the tray.
Place the salmon fillet on the other side of the tray. Drizzle with the remaining olive oil, sprinkle with salt, pepper, and the rest of the herbs. Add sliced garlic on top if using.
Roast salmon and sweet potato for about 15–20 minutes, until the salmon flakes easily and the sweet potato is tender.
While that bakes, lightly steam the broccoli for 3–4 minutes until bright green, and rinse the spinach.
Make a quick calming yogurt drizzle: in a small bowl, mix the yogurt with a squeeze of lemon, a pinch of salt, and (optional) a tiny pinch of dried chamomile from a tea bag for a gentle, soothing flavour.
Assemble your bowl: add spinach as the base, then top with roasted sweet potato, flaked salmon, and broccoli. Drizzle the yogurt sauce over the top.
Eat this 2–3 hours before bed, slowly and without screens if you can, to help your body wind down.
