A crunchy, seedy homemade granola with oats, mixed seeds, nuts, cinnamon, honey, and dried fruit.
Heat the oven to 160°C (320°F). Line a large baking tray with parchment paper.
In a large bowl, combine the oats, seed mix, chopped pistachios or pecans, cinnamon, and salt (if using).
Drizzle over the honey and olive oil. Toss very well so everything is lightly coated and clumps begin to form.
Spread the mixture evenly over the prepared baking tray, pressing it down slightly for chunkier granola.
Bake for 20–25 minutes, stirring once halfway, until golden and fragrant. Keep an eye on it so the nuts and seeds don’t burn.
Remove from the oven and let it cool completely on the tray (it will crisp up as it cools).
Once cool, stir through the dried blueberries or chopped dried apricots. Store in an airtight jar.
