Heat olive oil in a large skillet over medium-high heat. Add the chicken, paprika, garlic powder, onion powder, cumin, salt, and black pepper. Cook for 6 to 8 minutes, stirring often, until the chicken is browned and cooked through.

Add the onion, red bell pepper, green bell pepper, and yellow bell pepper. Cook for 4 to 5 minutes until the vegetables are tender-crisp, then stir in the garlic and cook for 30 seconds.
