A gut-friendly, high-protein Thai-inspired rice bowl that fits a 1650 kcal day.
Cook the jasmine rice if not already prepared and set aside.
Slice the chicken breast into thin strips. Chop the mixed vegetables into bite-sized pieces.
Finely chop the garlic, ginger, spring onion and chilli.
Heat the oil in a pan or wok over medium-high heat. Add garlic, ginger and chilli and stir-fry for 30–60 seconds until fragrant.
Add the chicken strips and stir-fry until cooked through and lightly browned.
Add the mixed vegetables and stir-fry for 3–4 minutes until tender-crisp.
Stir in soy sauce, fish sauce (if using) and lime juice. Toss well and cook for another 1–2 minutes.
Serve the chicken and veg over the cooked jasmine rice and top with sliced spring onion. Taste and adjust seasoning or extra lime/chilli as you like.
