A classic Bolognaise sauce perfect for pasta dishes, rich in flavor and perfect for a hearty meal.

Heat olive oil in a large pan over medium heat. Add the onions and garlic, and sauté until soft and translucent.

Add the carrot and celery to the pan, cooking until they begin to soften.

Increase the heat to high, add the ground beef, and cook until browned, breaking it up with a spoon as it cooks.

Stir in the tomato paste and cook for another minute.

Add the canned tomatoes, red wine (if using), and beef stock. Bring to a boil.

Reduce the heat to low, add the Italian seasoning, salt, and pepper. Simmer uncovered for 45 minutes, stirring occasionally, until the sauce thickens.

Adjust the seasoning to taste. Serve over freshly cooked spaghetti.

Garnish with fresh basil and grated Parmesan cheese before serving.
