Preheat oven to 200°C (390°F). Peel and cube the sweet potato. Place on a baking tray, lightly salt, and bake for 25–30 minutes until soft and starting to brown. Alternatively, boil until tender and drain well.
While the sweet potato cooks, heat a non-stick pan over medium-high heat. Add the lean ground beef, season with salt, pepper, and paprika, and cook for 6–8 minutes, breaking it up with a spatula, until browned and cooked through.
In a separate pan, fry the eggs to your liking (sunny-side up, over-easy, or scrambled).
Slice or dice the avocado.
To assemble, add the cooked sweet potato to a large bowl. Top with the cooked ground beef, fried eggs, cottage cheese, and avocado.
Finish with extra salt, pepper, and paprika to taste. Serve immediately.
