Crispy Tofu & Veg Skillet
One-pan vegetarian, high-protein, low-carb dinner with tofu and mixed non-starchy vegetables.

Pat the tofu dry and cut into bite-sized cubes.

Heat 1 tablespoon oil in a large skillet over medium-high heat. Add tofu cubes and cook until golden and crispy on most sides, about 6–8 minutes. Remove and set aside.

In the same pan, add remaining oil, then add broccoli, zucchini, and bell pepper. Stir-fry 4–5 minutes until just tender.

Add spinach or kale and cook until wilted, 1–2 minutes.

Return tofu to the pan. Add soy sauce/tamari, garlic, ginger, and a little salt and pepper. Toss everything together for 1–2 minutes.

Serve 1.5–2 palms of tofu plus at least 2 fists of vegetables on your plate.
