Zinc is the second most abundantly distributed trace element in the body after iron, playing a crucial role in numerous biological functions. Despite its availability in many foods, absorption is not always guaranteed, making zinc deficiency more common than most realize. Individuals who have followed a plant-based diet, whether vegan or vegetarian, for several years are at the greatest risk of zinc deficiency. Although zinc is present in nuts, seeds, and legumes, these foods also contain phytic acid, an anti-nutrient that binds to zinc and prevents its absorption. Simply consuming zinc-rich plant foods does not necessarily ensure that the body is getting enough of this essential mineral. Even individuals who regularly consume red meat, one of the richest sources of zinc, may still develop a deficiency. Conditions such as celiac disease, Crohn’s disease, ulcerative colitis, chronic diarrhea, and other intestinal disorders can impair the body’s ability to absorb zinc. Exposure to cadmium, a toxic heavy metal that competes with zinc for absorption, can further contribute to deficiency. In some cases, genetic mutations may interfere with zinc transport or metabolism, preventing cells from effectively utilizing the mineral.
